Spicy Chili-Lime Chicken Tacos

Despite loving to travel and very much enjoying my trip, I’m still recovering from my visit to west Tennessee. And I don’t just mean the exhaustion from two full days of traveling or the aches in my body from sitting in an airplane seat and lugging around my tightly packed carry-on. No, I mean my taste buds.

For the duration of my trip, I survived on tasty Memphis-style barbecue, chicken ‘n dumplings, pulled pork, hamburgers, and casseroles. Plus all of the desserts we made, like my bourbon pecan pie bars and chocolate chip cookies. Basically, I was craving fresh veggies paired with a spicy depth that only Asian and Mexican flavors can provide.

Enter these tacos bursting with Thai-Mexican fusion flavor!

Friday Five

  1. I spent last week/weekend in the gorgeous Pacific North West for my darling friend Kortni’s wedding. I’ll be sharing more fun things to do and places to eat/drink at soon!

2. Karla made Pad Thai from scratch and I just can’t even. This girl does it all and makes it look so effortless!

3. So proud of this Napa Valley restaurant for getting the attention it deserves from Zagat. Plus, who doesn’t love Game of Thrones?

4. Erin made her way across the US! I particularly love this photo essay she did from her visit to a National Park, don’t you?

5. Because we could all use a little help pairing two of our favorites: cheese and wine.

Thai-Inspired Wraps with Ayara Peanut Sauce

Guys, it has been disgustingly hot in Napa lately. One of the worst things about living in a new home that lacks functional insulation is cooking a proper dinner each night. No, I don’t want to make a roast chicken in 90 F weather, thanks. And no, I don’t want another salad/bowl of cereal/ ice cream sandwich for dinner. I swear I’m an adult.

A while back, Ayara Thai sent me two of their sauces to try. I did some reading and learned that founder Vanda Asapahu is a fellow food lover, just like me, and that the sauce brand actually started with a family-owned restaurant in the Los Angeles area. You can learn more about their story here.

As a lover of all things Thai food, I jumped at the chance to create a quick, easy, and tasty dinner that wouldn’t make me break out in a sweat.

SF Eats: Two Days of Eating My Way Through San Francisco

Though it’s only an hour away, I always feel that I don’t get to San Francisco enough. It’s such a fun city to wander around. It also happens to be superb for people watching and meeting. Plus all of the amazing food and cocktail options? Yeah, it’s a pretty sweet place that I’d love to get to know a lot better.

Early last month, I headed to San Francisco for a work conference and was forced to stay overnight in the city for  two nights. Right off Union Square. At a Kimpton Hotel. With a free rooftop happy hour that was killer. How horrible, I know.

I had an absolutely amazing time during my stay meeting up with a San Francisco-based blogger you may know, catching some sweet views and, as to be expected, eating and drinking my way through San Francisco. Now, I will pass along my knowledge, for your next trip to SF!

October Foodie Pen Pals

HAPPY HALLOWEEN! Later this evening, I will be dressed up in either a flapper costume and consuming tasty cocktails or in pjs and sleeping– I haven’t quite decided yet. One thing is certain though, Johanna sent me an absolutely fabulous Foodie Pen Pals box earlier this month!

Weekend Escape: Portland

Guys, it’s been way too long since I’ve been to one of my absolute fave cities: Portland. And this afternoon, I’ll be on a flight heading up there. As an added bonus, I just found out it’s supposed to be, like, gorgeous in Portland this weekend. So. Much. Excitement.

So, let’s narrow down my list of reasons I cannot wait to get my booty back to the land of hella beer, not pumping your own gas, and hipsters to my top 7 reasons why I will not be able to calm down about this trip:

1. This girl.

Accurately portrays how we felt that night…

2. Ms. Kortni and I are going to the food trucks. Yes, the food trucks of Portland.

3. Watching the 49ers play the Broncos at Spirit of 77Totes packed my Frank Gore jersey.

4. We’re going to hike this trail with mega gorgeous views.

5. This fabulous cocktail at Andina.

Absolutely no cilantro, thanks.

6. I get to use my fabulous new suitcase I received for my birthday. It’s similar to the one I fell in love with when I was perusing Lauren’s How to Pack for 2 Weeks in a Carry On: Cold Weather Edition post on her blog, Seventeenth & Irving (if you haven’t checked it out yet, do.). I obvi needed one for Paris and this will be my first time using it!

7. I get to check out Whispering Woods Resort in Welches, OR. Pool time in 80+ degree weather? Count me in.

Yep, those reasons are just the tip of the iceberg when it comes to why I’m so jubilant about this trip. I’m always on the lookout for new fabulous things to do in Portland, so let me know what else I should be doing in the comments below or tweet them to me on Twitter!

June Foodie Pen Pals

June was such a lovely–albeit crazy– month! I celebrated my birthday week, booked airfare for two trips to one of my favorite cities (Portland!) and lodging for one loonnng trip to a *soon to be* favorite city (Paris!). Over the weekend, my roommate and I hosted a housewarming party (pics and a menu coming sooooon!), which has taken up all of my spare time, resulting in a very tardy to the party Foodie Pen Pals post! Yes, I went there. So, without further ado, let’s take a gander at what the lovely (but sadly, blog- and Twitter-less) Denise of the Philadelphia area sent me in this month’s edition of Foodie Pen Pals!

Two Days in Prague: What to Do

Tuesdays can be good things. Taco Tuesdays, Travel Tuesdays, Martini Tuesdays.. All good things. This Tuesday is a Travel Tuesday sort of day. The lovely ladies at The Lazy Travelers + the Hubs will soon be in one of my favorite cities in the world: Prague. I’ve written about some of my favorite memories of Prague and where to eat in Prague, but I wanted to be a bit more specific for this trio. They’ll only in Prague for a couple of days, so I told them I’d give them my “must dos” and throw in some extras , in case they manage to wind up with some more time!

May Foodie Pen Pals

Happy Friday, y’all! I’ve had a very busy and exciting past few days. Most noteworthy is that I’m moving into a new apartment that happened to be my first choice of all apartment options! I’m quite happy to be living with one of my best friends and enjoying the fabulous fireplace– I’ve never had one before– and two bathrooms. Such a luxury for two chicks!

This month, I received a package from Elena at The Sweetness of Joy. Elena is on a mission to document her journey to conquer her sweet tooth and enjoy the sweet things that life has to offer, and often blogs about health and fitness– something we could all use, am I riiiiiiight? I think Ms. Elena must have done some research on me, because she KILLED IT with the goodies she sent me! I could tell right away that a lot of thought was put into what she picked out for me (heaps of peanut butter and chocolate items!), and I totally appreciate it.

March Foodie Pen Pals

Monday. Yuck. I may or may not need to devour one of those tasty peanut butter cupcakes with decadent chocolate peanut butter ganache in order to get this morning back on track. I do get a little happier and less Monday-ish when I think about the fact that today is:

  • Opening Day for the San Francisco Giants, World Series Champs, I might add
  • The first day of April and not in an April Fools’ sort of way

  • Foodie Pen Pals reveal day!

This month’s Food Pen Pals post is all about two of my favorite things: Thai food and chocolate. Jazzy of Travel Jonez is obviously trying to woo me. I’m not quite sure why, or what she could possibly want in return, but here I am, indebted to her for sending me some of the most delicious things I could ask for.
